I love sweet potatoes but the sweetness can get a bit old in a savory course, so I serve them with a hot and spicy mayo. This fun sweet potato snack or hors d’oeuvres is easy to eat and quick to prepare. They are best served hot and crispy right out of the oven. Use the leftover mayonnaise on sandwiches or in a creamy potato salad.
Sweet Potato Fries with Spicy Mayonnaise

Ingredients
- 2 large sweet potatoes, sliced into fries
- 2 t olive oil
- ⅓ c canola mayonnaise
- ½ t smoked paprika
- ½ t garlic powder
- ¼ t salt
- ¼ t hot sauce
- salt and pepper
Instructions
- Heat oven to 425 degrees. In a roasting pan, toss potatoes and oil and add generous pinches of salt and ground pepper. Roast about 35 minutes or until potatoes are browned and slightly crispy, tossing once or twice to ensure nothing is sticking.
- In a small bowl, combine mayo, paprika, garlic powder, salt and hot sauce and stir well. Keep chilled until ready to serve.

Hi Riley, Thanks for asking! There are several types of vegan, egg-free mayo. Here are a few: Vegenaise (made by Follow Your Heart), Nayonaise (made by Nasoya), Canola Mayo (from Spectrum Organics), and Mindful Mayo (Earth Balance). Any of these can be used in this recipe. You may find them in traditional grocery stores, but if not, Whole Foods or any health food store should have at least one or two options. They can be found either in the refrigerated section near the mayonnaise products or in the dry food aisles near the salad dressings.
Smoked paprika (aka Smoked Spanish Paprika) is sometimes found in regular grocery stores, but I’ve purchased it at Whole Foods and from Penzeys Spices. Penzeys has several store locations in the US, but you can also order from them online. http://www.penzeys.com/cgi-bin/penzeys/penzeysstores.html

I love sweet potatoe fries and I eat them often. I dont like spicy though, my tongue just cant handle it.
So I was just wondering if this mayo dip would taste fine if i left out the hot sauce?

Hi Summer! Yes, I think leaving out the hot sauce is fine. You may consider adding a drop or two of apple cider vinegar for a little tanginess without the heat. But either way should be good! π
