I enjoy smoothies year-round, but have been trying to expand my ingredient repetoire, and not just have berry smoothies day-in, day-out. I love the combination of tropical fruits with berries so in a not-so-bold step forward, this strawberry-mango combination came to mind. Whenever I eat mangoes, they are so aromatic, they always remind me of mint, so I thought fresh mint would be a nice addition to this recipe as well. I loved the result, specifically the harmony of flavors (“Not too tart…not too sweet.”) and that neither fruit was dominant. This blend is not as heavy as other smoothies that utilize bananas, almond milk or soy yogurt, so you can enjoy it with a meal and not feel too weighted down. If I had fresh limes in the fridge, I would have added a squeeze of lime juice as well.
- 1 c fresh mango, medium dice
- 1 c whole strawberries
- ½ c orange juice
- 4-6 fresh mint leaves
- Combine ingredients in blender and puree until smooth and glossy.
